One of my children’s and husband’s favorite breakfast is a tater tot breakfast casserole that I make. It is perfect for a large family. I will make a large casserole and since it refrigerates perfectly they will be able to have it for breakfast for a couple of days. When I reheat I like to place the whole thing in the oven or a slice in the toaster oven. My hubby microwaves his so I know whichever reheat method you use it still comes out delicious. If I’m feeling ambitious I will make 2 and freeze one for a later date.
Tater Tot Breakfast Bake Casserole
Meat,Veggies, Eggs, and Tots. Deliciousness for every member of the family. Kid approved even with the veggies.
- 1 bag Frozen tater tots
- 1 roll breakfast sausage
- 6 slices bacon
- 1 small onion
- 16 0z medium cheddar cheese
- 2 medium tomatoes
- 6 large eggs
- 1/3 cup milk
Cut bacon into small pieces. Combine bacon and sausage in skillet and cook. When it is close to done add mushrooms, onions, tomatoes to skillet. When done cooking set in bowl and set aside
Mix eggs and milk in a bowl and set aside
Mix 3/4 of the cheddar cheese in the sausage, bacon, veggie mix and add frozen tater tots. Pour mixture in casserole dish.
Pour egg mixture over the mixture and top with remaining cheese
Bake on 350 for 20 min or until golden brown.
I have made this recipe many times and many different ways this is just the foundation of the recipe. It works well with any breakfast meat. I have also tossed other veggies like zucchini in. Be creative and adjust it to the preferences of your family.
