Healthy “Pasta” Salad ( you will need a spiralizer aka zoodle making machine). I have been trying to reduce carbs so was looking for a way to make a low carb pasta salad. I came up with this and my boys loved it!!!

Ingredients

4 Good size zucchini

3 large slicing tomatoes cubed or you can use cherry tomatoes

Pepperoni cute into fourths or they have these new mini pepperonis

16 oz Sharp cheddar cheese ( cubed)

4 cans black olives

1 medium onion finely diced

Italian dressing

Directions

Make 4 zucchini into zoodles ( place on paper towel to absorb some of the water from the zoodles) blot dry. Place zoodles in bowl and add all the other ingredients

Now you have 2 choices you can make your own dressing which is basically olive oil, seasonings, and some vinegar oooorrrrr You can be like me and buy a big bottle of Zesty Italian dressing.

Mix it all together

Toss some shredded Parmesan cheese in

Chill and serve
